So I've started prepping breakfast ahead of time so I don't have to spend a lot of time cooking in the mornings. This week I didn't get to it till Monday night because, well, Sundays are for resting. Or that's my story and I'm sticking to it, anyway. ;-)
So I start out by scrambling a rolls of turkey sausage with some diced jalapenos. I find turkey sausage to be a bit bland and the jalapenos add a nice flavor. Also, veggies. Amiright?
Once the sausage is cooked through, I portion it out evenly in some small bowls, cover 'em and put 'em in the fridge after they've cooled.
That way, each morning all I have to do is heat the sausage mixture in a small (tiny) skillet...
...beat an egg with a splash of half and half and salt...
...and pour over the sausage. I let it cook just until the egg is mostly set then I flip it in one giant piece, melt some cheese on it and...
...add a slice of toaste. Bing, bang, boom! It's breakfast, ya'll. High protein, filling and actually pretty delicious.
I eat breakfast around 5:45am and this lasts me without any serious hunger pangs until around 10am when I have a big cup of coffee and THAT usually holds me until lunch. Lunch lately has simply been a Special K shake and that more or less holds me until supper.
Now. If I could just figure out some yummy quick suppers...
