Monday/Tuesday

So last night I went home and tried to make a cooked "salad" with Kale, onion, broccoli and brussel's sprouts. Sauted it all in a little canola (don't have any olive oil right now) and roasted some corn that I originally intended to mix in with all the other stuff. Well, it started to cook down and smelled good. Added a little balsamic vinegar to the skillet shortly before it was done and thought, "This looks awful but I'll be it tastes good."

It didn't. I didn't plan out the cooking time very well. The b. sprouts needed a little more time on them. The Kale needed a little less time. The broccoli and onions were okay but picking them out around the b. sprouts and kale was tiring. Thankfully, I'd decided to avoid mixing the corn in with the rest of it so I ate all the corn and half the rest of the veggies before giving up and tossing it in the garbage. Needless to say, I was still hungry an hour later.

I had bought some whole wheat bagel thins at Dollar Tree on the way home so I ended up toasting one and smearing it with an ounce of cream cheese. That hit the spot and I was satisfied the rest of the night. I did eat a spoonful of chocolate pudding a little later, though and drank a cup of sugary/half and half coffee.

This morning I choked down another Special K flatbread/egg sammy. It's not that it's bad tasting but all those bell peppers in the morning just make me a little gaggy. Plus, gives me heartburn. I still have two more to eat. *sniffle*

I drank a regualar (non-latte) coffee at morning break and ate a ham sandwich and apple for lunch and a fun  size Reese's cup that Mama brought me. Drank water. So all in all, not bad so far. I still need to walk this afternoon and I have to figure out what I'm eating for supper. I'm thinking about a chicken jalepeno popper pocket inspired by this and this. Basically, a cooked and shredded chicken breast mixed with cream cheese and diced jalapenos tucked inside a crescent roll pocket and baked. Maybe pan roast some b. sprouts to go with it. I think the can of crescent rolls I have are low fat. I think. It sounds like it might be delicious anyway. Can't taste worse than the mess I made last night. And the point of eating healthy is actually being able to eat, right?

If I don't go with the pocket idea, I may saute some mushrooms, pan roast some b. sprouts and cook the chicken breast in the oven.

That's the plan for now, at least.
